Chocolate Chip Protein Cookie Dough!

As a vegan trying to lose a little weight I am always on the hunt for a good vegan protein to help me loose weight, stay healthy and build some muscle… I also have a ridiculous sweet tooth as you know and love to make delicious, (some what) healthy desserts! So for you today I am sharing one of my recent Fav’s which is this Gigantic Protein Raw cookie dough style cookie… This is essentially Raw cookie dough in flavour and texture, so you can eat it in balls, chunks, make mini cookies or like me.. make one gigantic one!!

Here’s the recipe in Video format if you want to see how easy it is to make! Literally Blend and smash!

What you Need

3/4 Cup of Ground Nuts (I Used Cashews)

1/2 Cup (Or one satchet, approx 25g) Protein Powder (I used Chocolate VITL Protein)

3 TBSP Sweetner (Agave, Maple etc, Liquid is better! If not use dry and add a little dairy free milk or water)

3 TBSP Almond Butter

Handful of Chocolate Chips or Cacao Nibs (I used Pacari)


What to Do

Step 1; Chuck everything except the dates into a food processor.

Step 2; Blend!

Step 3; Add Dates one by one into the mixture and blend until it forms a crumble.

Step 4; Chuck in a pan or cases of choice.

Step 5; Smush Down so the mixture packs in tight!

Step 6; EAT! You can eat this in little clumps, make it into balls, or like me make it into one giant cookie! Flatten it out and make Christmas Cookie shapes!

This is essentially raw cookie dough. It is super super sweet and moreish and even a little will satisfy your sweet tooth! Believe me! I added some extra chocolate nibs on top because I love them!
