Raspberry and Coconut Slices!

Raspberry, Coconut and Chocolate is a dream team don’t you think?  This weekend I created these delicious Raspberry Coconut Squares with a delicious Chocolate Sauce on top! If you would like to watch the tutorial in video format always check out my Youtube Channel for weekly recipes!

What you Need;

Base;

2 Cups Coconut (Shredded)

1/4 Cup Almond Butter

3/4 Cup of Raspberries

Chocolate Layer;

1/2 Cup Raw Cacao Butter (I Used Elements for Life)

1 Cup Raw Cacao Powder (I Used Elements for Life)

Dash of Dairy Free Milk If Needed

5 TBSP of Sweetner (I used Sweet Freedom Fruit Syrup)

What You do

Step 1; Blitz together the Coconut and Raspberries along with the Almond butter to create your flashy coconut base.

Step 2; Push this into a cake tin or pans or whatever you have to hand!

Step 3; Make the Chocolate sauce by blending the remainder of the ingredients. If the sauce is too stiff add some more agave or syrup, or add a splash of dairy free milk if needed. If it is too runny then add more cacao powder.

Step 4; Pour this over your coconut slab and set in the fridge for a few hours!

Step 5; Slice and Enjoy!

I have been really enjoying using their cacao butter. It is something that is not readily available easily in the UK so a great place to buy from. They also do delicious cacao powder and their raw vegan brownies are melt in the mouth and absolutely amazing snacks! Be sure to check them out!
