So I am trying to get back into the swing of things after a manic hectic few weeks, and as I am moving in a few more weeks I need to start getting some blogs up for you guys! This week I made these delicious Carrot and Orange Cakes. My goodness I think one of my favourites thus far! They are less spice and more sweet with a citrus twist! I hope you love them! What You’ll Need
2 Cups Cashews (I used ground, Soak overnight if using whole cashews)
1 TBSP Vanilla
2-3 TBSP Shredded Coconut
5 TBSP Sweet Freedom Fruit Syrup (Can be substituted for other sweetner such as agave, maple syrup or Dates)
3 Cups Shredded Carrot
6 Medjool Dates Pitted
Zest of One Large Orange
Juice of One Large Orange
1 cup Ground Walnuts
What You Do
Step 1; Blend all the icing ingredients together, Add water if needed to get the desired consistency
Step 2; Leave this to one side for later!
Step 3; Blend all the Base ingredients together.
Step 4; Spoon these into your pans of choice, I used 3 smaller cake pans, this could also make cupcakes or one large cake!
Step 5; Level out and then add icing on top!
Step 6; Decorate. I used Sweet Freedom Chocolate Orange Spice sauce and it was a heavenly mix!
(P.S This can easily be made raw by substituting the Sweet Freedom products for Raw alternatives!)

I was kindly recently gifted an array of amazing Vegan Chocolate products from the brand Sweet Freedom and I have to say they are all without a doubt delicious! They are super affordable and available in all the main super markets! They are 100% natural and make the most yummy fruit syrups, liquid chocolate and chocolate spreads… and come on.. the packaging is ridiculously cute!
They have a few different ranges that I will list below with a little mini review of each 😉
Firstly their Choc Shot Range which is their original range which is basically the most delicious liquid chocolate imaginable. It can be used as a general sauce for desserts, puddings breakfasts or anything you want an added bit of chocolate on! It also makes lovely hot chocolate too! It is made using apples, grapes and carob as well as water, cocoa, rapeseed oil and natural chocolate flavour.
They have also just released an amazing range of Milkshake Makers, they come in two flavours Banana and Caramel. My personal favourite is Caramel, it is absolutely delicious and something I have actually un ashamedly been drinking each night! The banana is a massive hit with the kids. It is certianly something I will be looking to repurchase. It is easy to make, low in fat, natural and most importantly, scummy!
Choc Spread is a must have isn’t it? I absolutely love this stuff just spread on plain toast. It is moreish and heavenly! At just 14 calories a TSP it is also 75% less fat than the leading brands. This is amazing again on puddings desserts or toast! I have really enjoyed this and as it natural I am more than happy for my little people to eat far to much chocolate on toast hehe!
They also have their amazing Fruit Syrup which I used in the recipe above as a sweetener. It can be used in recipes for baking, as a sweetener on something like pancakes, porridge… whatever you fancy! It is very sweet but very nice! It is 100% natural and made from sweet fruit extracts like grapes apples and carob.
All their products are free from chemical processing, additives, preservatives and GMO’s. They are all low GI, Vegan and UK made. (Also free from 14 major food allergens!!)
