Sick Day Walnut Brownie Thins! Raw, Easy, Quick….

When I am ill.. and bake off happens to be on the television all I want is treats.. chocolate and cakes and all things yummy. This week I happen to have a severe case of (woman) flu. I feel drained and awful and just really can’t be bothered to do anything. SO I figured I would do my quickest and easiest recipe to date and show you my go to sick day sweet treat recipe.

These are my Walnut Brownie thins.. and oh my they are heavenly, sweet and the perfect pick me up and treat.

Check out my video here to see a mini tutorial… it’s literally a minute long.. that is how easy these are to make! Just 4 ingredients in total (although you can add more if you aren’t as lazy or ill as I am right now!)


What You Do

Brownie Base

2 Cups Ground Walnuts (You can grind your own if you have whole or halves)

5 Medjool Dates (Pit them!)

2 TBSP Agave Nectar (or any other natural sweetener, I used Groovy Foods)

2 TBSP Cacao Powder (I used Pacari)

Choc Sauce Topping

3 TBSP Cacao Powder (Pacari again here of course)

5 TBSP Agave (again use any sweeter you want, must be liquid in this part though!)

What You Do

Step 1; Add all your brownie ingredients into the food processor

Step 2; Blend…. Told you it was easy ey!

Step 3; Add this into a cake tin or pan, I used an 8 inch pan to make them thin, you could make these fatter by using a smaller pan or doubling the recipe of course. I also used parchment paper stripes just as it makes them easier to take out without breaking them. Put this into the pan and push down with your spoon to meet all the edges and form your brownie base.

Step 4; Make your sauce! Add the cacao and agave into a bowl and mix, using a fork or spoon until it has combined. This can take a minute… it will get there believe me.

Step 5; Pour over your brownie to form a slight chocolate coating. It just about covered the whole brownie. As agave is very sweet and very rich you literally only need the smallest amount.

Step 6; Pop in the fridge until you want to eat them! Yummy.

IMG_1565_FotorThese are super sweet dense brownies, they are sticky and stodgy and perfect when you feel well.. pants!

Here’s a few ideas to jazz this brownie mix up! You could add chia seeds or other nuts like cashews almonds and pecans to adapt the taste? You could even add orange, lemon or mint to make a refreshing brownie bite?

How about topping them with banana nice cream or frozen berries? The possibilities are endless.

Like I said, I am ill and lazy so I just topped mine with Some more ground walnuts and it was delicious!

    do you soak your walnuts or have them dry?

      Hi Nick, Thanks for the question, sorry in my delay in getting back to you! I had missed your comment! I used ground walnuts in this recipe and didn’t need to soak, I have used whole and half walnuts and found no need to soak either. Genrally If the nuts are used in the Base of a cake they are better to be a bit more sturdy and the dates or sweetner will bind the mixture (if you are going for a cheesecake then they should be soaked for a more cream texture). Hope this helps! xx
