
I am in love with lemon lately after making a lemon cheesecake a few weeks back!
So I figured I would make some lemony delicious snacks!
These are super soft, chewy and sweet but tangy. A delicious on the go treat. I loved these so much they didn’t last long but this recipe made me around 12-15 balls.. of various shapes and sizes. You can make them to your preference of course! These are so easy to make, super quick and moreish. Great if you have limited time to make on the go healthy snacks!

What You Need
Truffles;
2 cups of almonds
1/4 cup of sweetner (I used agave)
Juice of 2 lemons
Zest of 2 Lemons
Tsp of vanilla
5 medjool dates
Outside Coating;
Zest of 2 lemons
A few tablespoons of ground almond
What You Do
Step 1; Blend the almonds until it forms a crumb.
Step 2; Add in all your other truffle ingredients and blend until it forms a nice dough
Step 3; Mix the outside coating in a bowl or plate (lemon zest and almond)
Step 4; Take a spoon of the mixture and roll it in your hands to form a bowl, then roll this ball into your coating mixture and place to one side.
Step 5; Repeat step 4 as many times as you can until all the mixture is gone. I tend to make 12-15 but this depends on what size you go for and is all personal preference.
Step 6; Eat them! They should be kept in the fridge to make them last as long as possible however I would say eat within around 4 days. Honestly mine really didn’t last long because they were so darn tasty!
